Welsh Rarebit

Welsh rarebit is an unctuous spiced cheese based sauce traditionally spread on thick toast but pairs exceptionally well with smoked fish when grilled until bubbling & charred. Often made with milk but our version uses beer for a sharp tangy edge. 

Method:

1. Spread onto thick-cut toast or smoked haddock & place under a hot grill until bubbling and golden.
