THAI SEABASS, SPRING ONION & GINGER

Cooking Instructions

  • METHOD
  • Preheat oven to 190oc.
  • Place the bass on a greased baking tray with the fillets sitting as packed, sprinkle a little water over the fish & then soak a piece of greaseproof paper & place over the fish tucking in at the base.
  • Place in the oven for 10 to 12 minutes.
  • Remove film from the rice & microwave for 2 minutes or so.
  • Gently fry the spring onion mix in a touch of oil for 1 minute, add a tablespoon of water to the pan & the oyster sauce, simmer for 1 minute.
  • Put the bass onto 2 warm serving plates & pour over the sauce.
  • Serve with the fragrant coconut rice on the side.
