
Simply Grilled Sole Fillets
Cooking Instructions
Heat a pan with enough oil to submerge the fries to 180oc.
Lay the sole fillets out flat on a greased baking sheet & brush with olive oil or clarified butter.
Season with salt & pepper & place under the grill for 4 to 5 minutes.
Fry the potatoes in the hot oil for 3 to 4 minutes until golden & crisp.
Empty the spinach into a small pan & warm through on a low heat for 2 minutes or so.
Toss the fries in a bowl with the parmesan seasoning.
Lay the sole on 2 warm serving plates, garnish with the lemon & serve with the fries, spinach & tartare sauce on the side.
