Seared Barra Scallops & Sea Bass

  • Bring a pan of salted water to the boil. Cook the pasta for 11 minutes or
    until the desired texture.
  • Sear the prawns & seabass in a hot pan with a little oil for 1 minute or so, remove onto a dish & set aside.
  • Place the sauce in a large shallow pan & bring to a simmer.
  • Sautee the courgettes in a frying pan with a touch of oil & salt until slightly charred & tender.
  • Using tongs add the pasta to the sauce with a little of the pasta water as
    required.
  • Mix thoroughly, season to taste & add the seafood.
  • Share between 2 serving bowls with the charred courgettes on top & enjoy.
