SEABASS & KING PRAWN SECHUAN PEPPER POT

A well known very popular chinese dish. Szechuan is a highly fragrant dish with lots of delicious pungent flavours done here as a broth with poached seafood served alongside a charred sesame tinged sweet cabbage & fragrant garlic rice.

METHOD

  1. Pre heat oven to 200oc.
  2. Place the cabbage on a baking sheet, season & place into the oven for 15 to 20 minutes until tender & charred.
  3. Pour the sechuan sauce into a wide based saucepan with the fish & prawns, simmer for 6 minutes or so on a low heat until the seafood is cooked.
  4. Peel the film from the rice & microwave on full power for 2 to 3 minutes until hot.
  5. Place the sechuan seafood into a large serving dish for sharing. Split the rice &
    cabbage between 2 warm serving plates & enjoy with with the sechuan
    seafood.
