Panko Parmesan Baked Scallops

Ingredients:

  • olive oil
  • 8 large scallops
  • 25g cup panko crumbs (you can use normal breadcrumbs too) 
  • 3/4 tablespoon grated Parmesan cheese
  • 1/2 tablespoon fresh minced parsley
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt, divided
  • fresh black pepper, to taste
  • Juice of 1/2 lemon
  • 1 1/2 tablespoons melted unsalted butter

Method:

  1. Preheat the oven to 200'c.
  2. Add a little oil to a baking dish
  3. In a bowl combine the panko, Parmesan, parsley, oregano, mix and season with the salt and black pepper.
  4. Arrange the scallops in the baking dish and top with the crumb mixture.
  5. Add the butter and the juice of half of the lemon to the dish. 
  6. Bake for 15 minutes, or until the scallops are opaque and the breadcrumb mixture is golden.
  7. Squeeze the remaining lemon over the scallops and eat right away.
