Panko Parmesan Baked Scallops
Ingredients:
- olive oil
- 8 large scallops
- 25g cup panko crumbs (you can use normal breadcrumbs too)
- 3/4 tablespoon grated Parmesan cheese
- 1/2 tablespoon fresh minced parsley
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt, divided
- fresh black pepper, to taste
- Juice of 1/2 lemon
- 1 1/2 tablespoons melted unsalted butter
Method:
- Preheat the oven to 200'c.
- Add a little oil to a baking dish
- In a bowl combine the panko, Parmesan, parsley, oregano, mix and season with the salt and black pepper.
- Arrange the scallops in the baking dish and top with the crumb mixture.
- Add the butter and the juice of half of the lemon to the dish.
- Bake for 15 minutes, or until the scallops are opaque and the breadcrumb mixture is golden.
- Squeeze the remaining lemon over the scallops and eat right away.
