Pan Fried Halibut

Cooking Instructions

  • Preheat oven to 200oc.
  • Lay the pave potato on a baking sheet lined with nonstick paper standing up.
  • Place in the oven for 35 to 40 minutes until golden & crisp.
  • The crunchy onions can be fried or baked in the oven. First coat the onions in the breadcrumbs if using the oven lay them flat on a paper-lined baking sheet & spray with oil, put in the oven for 15 minutes turning halfway through.
  • To fry place the rings in hot oil at around 180oc for 3 to 4 minutes until golden.
  • Coat the halibut in seasoned plain flour.
  • Place a pan on medium to high heat add a splash of oil & a knob of butter. Let the butter foam & brown slightly & fry the halibut for 2 to 3 minutes, add pieces of romanesco for presentation if desired & leave in the pan & set aside.
  • Heat the cauliflower puree in a small pan on low heat or in the microwave for 40 seconds or so.
  • Splash the puree onto 2 warm serving plates & if needed gently heat the fish slightly & place on the plate.
  • Put the crisp pave potato at the side.
  • Microwave the romanesco for 2 minutes or so & serve on the side with the crunchy onions, finally sprinkle the crushed salted hazelnuts over the fish.
