Balinese Fish Cake:

The fish cakes can be fried in a frying pan on a medium heat
for 4 to 6 minutes or placed in the oven at 180oc for 8 to 10
minutes .They should feel firm to the touch when done.
The chilli dip can be gently heated if desired. Serve with lime
wedges.

 

Monkfish Satay:

Empty the monkfish and pepper mix flat out on a greased baking tray.
Place under a hot grill and cook for 5-7 minutes turning once.
Loosen the lid on the rice and heat in microwave for 2-3 minutes. Empty the
peanut sauce into a small pan and heat to a gentle simmer. Heat a deep
fat fryer or a pan of oil to around 180oc. Add the shrimp chips to the oil a
few at a time they will puff up and triple in size in 2 or 3 seconds quickly
remove with a slotted spoon onto some kitchen paper and repeat with the
remaining chips. Serve with a wedge of lime.
