Mediterranean Baked Cod
Top cod fillets with a vibrant Mediterranean salsa made with tomatoes, olives, and herbs. This dish is not only a feast for your senses but also a source of mood-boosting nutrients.
Ingredients:
- 4 cod fillets
- 15 cherry tomatoes
- 10 black olives
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon parsley
- 1 teaspoon olive oil
- 1 lemon
- salt, pepper
Method:
- Pre-heat the oven to 200'C
- To an oven-proof dish add the cod brushed with oil and seasoned with the dried herbs.
- Half the lemon and squeeze the juice over the cod. Then top the cod with the other half of the lemon cut into slices.
- Add the tomatoes and olives to the dish and bake for about 10-15minutes.
- Serve and enjoy!
