Mediterranean Baked Cod

Top cod fillets with a vibrant Mediterranean salsa made with tomatoes, olives, and herbs. This dish is not only a feast for your senses but also a source of mood-boosting nutrients.

Ingredients:

  • 4 cod fillets
  • 15 cherry tomatoes
  • 10 black olives
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon parsley
  • 1 teaspoon olive oil
  • 1 lemon
  • salt, pepper

Method:

  1. Pre-heat the oven to 200'C
  2. To an oven-proof dish add the cod brushed with oil and seasoned with the dried herbs.
  3. Half the lemon and squeeze the juice over the cod. Then top the cod with the other half of the lemon cut into slices. 
  4. Add the tomatoes and olives to the dish and bake for about 10-15minutes. 
  5. Serve and enjoy!
