Pre heat a deep fat fryer or a large heavy based saucepan with 2 to 3 inches of cooking oil to 180oc. add
the shrimp chips 3 or 4 at a time for 4 to 5 seconds they will puff up & treble in size, remove quickly onto kitchen paper & set aside.
Empty king prawn and pepper mix flat out on a greased baking tray.
Place under a hot grill turning occasionally. Cook for 4-6 minutes until lightly charred.
ensuring prawns are cooked.
Peel film on rice, heat in microwave or stir fry in a hot wok for 2~3 minutes.
Empty peanut sauce into a small pan gently heat for 2 minutes. Share the prawn & pepper mix between 2 warm serving bowls with the peanut sauce, rice & shrimp chips on the side.
Serve with a wedges of lime.
