Cooking Instructions
METHOD
- Season the skewers with salt & pepper.
- Place under a hot grill turning regularly for 8 to 10 minutes until charred & just done.
- Transfer the butternut squash stew to a shallow pan & bring to a simmer on medium
heat for 5 minutes or so. - Place the couscous into a bowl & heat in the microwave for 2 to 3 minutes until hot.
- Arrange the couscous onto 2 warm serving plates & top with the monkfish skewers drizzling over any juice from the fish & place a spoonful of the cooling yoghurt sauce at the side.
- Pour the hot squash stew into a serving bowl & enjoy on the side.
