Halibut with Butter Beans

Ingredients:

  • 2 fillets of Halibut (or any white fish similar like cod, hake etc)
  • 1 tin (400g) of butter beans, drained
  • 250g of fresh tomatoes or 1 tin (400g) of chopped tomatoes
  • A handful of mixed herbs (thyme, Marjoram, Parsley, Oregano, Sage, Basil)
  • A pinch of garlic granules (optional)
  • olive oil

Method: 

  1. Add the fresh tomatoes with some olive oil to a pot and cook for a few minutes. (If using chopped tomatoes don't add any olive oil)
  2. Add the butter beans to the tomato, mix together and add the herbs and garlic (if using). Cook on a medium heat until the tomatoes are soft. 
  3. Heat a splash of oil in a large frying pan over a medium-high heat. Place the halibut into the pan, reduce the heat slightly and fry for four minutes. Turn over and fry for another 3-4 minutes, or until cooked through and crisp.
  4. Top the tomato, butter bean mix with the halibut, serve and enjoy!
