GRILLED SEA BREAM WITH SPINACH & CHILLI 

Ingredients:

  • 2 Fillets of Sea Bream
  • 3 garlic cloves, sliced
  • 250g baby spinach
  • ½ tsp dried chilli flakes
  • 5 Tbsp olive oil
     

Method:

  1. Preheat a grill to medium-hot
  2. Put the sea bream on a baking sheet lined with foil.
  3. Pat the fish dry with kitchen paper, then drizzle with some olive oil and season with salt.
  4. Grill for 4-5 minutes, turning halfway, until the skin is blistered and the flesh is just cooked.
  5. For the chilli spinach, pour some oil in a frying pan, add the chilli and garlic and turn on the heat (the oil will then gently be infused with flavours).
  6. When the garlic begins to turn brown, add the spinach leaves - a handful at a time, after having stirred. Cover with lid and simmer for 2 minutes.
  7. Serve and enjoy!
