Grilled Oysters In A Chipotle, Bacon And Onion Butter
Ingredients:
- Oysters
- 100g Butter, softened
- 2 tbsp white onion, finely chopped
- 4 slices sweet smoked bacon, crisp-cooked and finely crumbled
- 1 canned chipotle pepper, finely chopped
Method:
- Rinse the oysters in cold water. Discard any with shells that are open and won't stay closed when gently squeezed shut.
- Pre heat the grill to a medium-high heat
- Open & clean oysters of any shell.
- Sprinkle the butter mix over each oyster & place under a hot gril for 2 minutes or so.
- Serve with wedges of fresh lime and enjoy!
