Grilled Oysters In A Chipotle, Bacon And Onion Butter

Ingredients: 

  • Oysters 
  • 100g Butter, softened
  • 2 tbsp white onion, finely chopped
  • 4 slices sweet smoked bacon, crisp-cooked and finely crumbled
  • 1 canned chipotle pepper, finely chopped

 

Method:

  1. Rinse the oysters in cold water. Discard any with shells that are open and won't stay closed when gently squeezed shut.
  2. Pre heat the grill to a medium-high heat
  3. Open & clean oysters of any shell.
  4. Sprinkle the butter mix over each oyster & place under a hot gril for 2 minutes or so.
  5. Serve with wedges of fresh lime and enjoy!
