Grilled Lemon Herb Salmon

Marinate salmon fillets in a zesty mix of lemon, herbs, and olive oil, then grill to perfection. The combination of omega-3s and vitamin D makes this dish a mood-boosting delight.

Ingredients:

  • 110ml olive oil
  • 60ml fresh lemon juice
  • 2 tblsp red wine vinegar
  • 1 tblsp honey
  • 4 tsp minced garlic
  • 2 tblsp fresh basil, chopped
  • 1 tblsp fresh parsley, chopped
  • 1 tblsp fresh rosemary, chopped
  • 2 tsp salt
  • ½ tsp freshly-ground black pepper
  • 4 salmon fillets

Method:

  1. To make the salmon marinade, whisk together all the ingredients or shake them in a large jar with a lid to combine. 
  2. Cover the salmon with 3/4 of the marinade and leave for about 30 minutes.
  3. Grill the salmon for 4-5 minutes, brush the salmon with the extra marinade. 
  4. Serve and Enjoy!
