
Grilled Lemon Herb Salmon
Marinate salmon fillets in a zesty mix of lemon, herbs, and olive oil, then grill to perfection. The combination of omega-3s and vitamin D makes this dish a mood-boosting delight.
Ingredients:
- 110ml olive oil
- 60ml fresh lemon juice
- 2 tblsp red wine vinegar
- 1 tblsp honey
- 4 tsp minced garlic
- 2 tblsp fresh basil, chopped
- 1 tblsp fresh parsley, chopped
- 1 tblsp fresh rosemary, chopped
- 2 tsp salt
- ½ tsp freshly-ground black pepper
- 4 salmon fillets
Method:
- To make the salmon marinade, whisk together all the ingredients or shake them in a large jar with a lid to combine.
- Cover the salmon with 3/4 of the marinade and leave for about 30 minutes.
- Grill the salmon for 4-5 minutes, brush the salmon with the extra marinade.
