Grilled Gigha Halibut

Cooking Instructions for our Dine at Home meal.

METHOD


Preheat your grill to its highest setting.

Season the halibut with salt & pepper. Coat the top side with plain flour & shake off the excess. To create the score marks put a metal skewer or something similar over a naked flame until red hot. Score the fish 3 times from 1 corner then repeat from the opposite side.

Sear the fish in a frying pan with a little oil on a high heat for 20 seconds until well coloured.

Place the fish under the grill on a tray with the spinach beside on the lower shelf for 5 minutes or so.

Cook the arancini in a deep fat fryer at 170oc for 3 to 4 minutes until golden & crisp.

Place the cream sauce in a small saucepan & bring to a gentle simmer do not boil. Heat the crushed potatoes in the microwave for 2 to 3 minutes. Put the spinach on 2 warmed serving plates, top with the seared halibut, the crisp arancini on the side & finally the pepper cream. Enjoy with the lemon crushed potatoes.
