Crisp Fried Stone Bass

Cooking Instructions For Dine At Home

Pre heat oven to 200oc. Place the cabbage and potatoes onto 2 seperate baking trays, season with salt and pepper & put into the oven for 15 to 20 minutes until the cabbage is slightly charred. Place a frying pan on a medium heat, season the stone bass with a little salt & fry skin side down for 3 to 4 minutes until golden & crisp. Put the fish into the oven skin side up for the last 6 to 7 minutes with the veg. Put the cauliflower puree & bacon jus into 2 seperate small saucepans & heat gently. Remove the cabbage from the oven. Sprinkle the black pudding crumb over the potatoes & leave in the oven for 2 more minutes. Place the roast cabbage onto 2 warm serving plates with a round dollop of cauliflower puree at the side. Rest the crispfried bass against the cabbage & drizzle with the bacon jus. Remove the potatoes from the oven & serve on the side
