Crisp Fried Sea Bass

  • Preheat oven to 190oc.
  • Place the tandoori veg flat on a baking sheet & season with a little salt, transfer to the hot oven for 25 to 30 minutes until tender & charred.
  • Place the rosti on a separate baking sheet & put it into the oven for the final 15 minutes or so turning regularly until crisp.
  • Put the coconut curry in a small saucepan & set aside.
  • In a large frying pan with a little oil on medium heat lay the bass seasoned with salt skin side down & fry for 2 to 3 minutes until crisp & golden, remove the pan from the heat & turn the fish to the residual heat will cook the fish through.
  • Lay the rosti on 2 warm serving plates, heat the curry & pour around the rosti, top with the crisp bass & serve with the tandoori veg on the side.
  • ENSURE FOOD IS PIPING HOT THROUGHOUT
