Charred Marinated Monkfish

Cooking Instructions

Preheat oven to 200oc.

Place the courgettes & potatoes onto a baking sheet, season well & put into the oven for 20 minutes shaking halfway through cooking.

Unwrap the monkfish onto a baking sheet & season with salt & pepper.

In a hot frying pan with a splash of oil sear the fish for 2 minutes until charred & place back onto the baking sheet.

Place the fish into the oven for the last 8 to 10 minutes with the sweet otatoes.

The salsa is intended to be eaten slightly chilled just remove from the fridge 1 hour before serving.

If it is preferred it can be slightly heatened in a small pan (be careful not to cook the tomatoes as they could go to soft).

Arrange the salsa onto 2 serving plates, slice the monkfish & lay on top & serve with the sweet potatoes on the side & some fresh lime.
