Cooking Instructions

METHOD

  • Preheat oven to 200oc.
  • Place the chips flat on a baking sheet & put in the oven for 20 to 25 minutes until crisp & golden, shaking halfway through.
  • Place the roll on a baking sheet & put in the oven for 25 minutes until golden.
  • Roll the scampi in breadcrumbs, they have been pre-prepped in flour & egg.
  • In a pan with an inch or so of oil fry the scampi on medium heat for 3 to 4 minutes until crisp.
  • The mushy peas & mustard cream can be gently heated in the microwave for 1 minute or so each to heat through.
  • Place the soda bread in the oven for 5 minutes or so at the end with the chips to refresh.
  • Arrange the cured salmon on a serving plate alongside the piccalilli & maybe a slice of lemon.

  • ENSURE FOOD IS PIPING HOT THROUGHOUT
