Baked Shetland Cod with shellfish cream.

Cooking instructions for our preprepared meal.

METHOD 

Preheat oven to 180oc. 

Remove the cauliflower and potatoes from packaging and place on a greased baking tray. Season with salt and pepper. Place in the oven for 25 to 30 minutes. The cauliflower will char at the edges this is what you want for a deep flavour.

Place cod in the oven after the veg has had 15 to 20 minutes cooking. Depending on the thickness of the fish the cooking time can be between 6 and 10 minutes. Check the fish by poking through the thickest part of it with a skewer or small knife if there is no resistance its done.

The peas can be heated in the microwave for 1 minute or so or if preferred can be gently heated through in the shellfish cream in a small saucepan. Spoon the peas onto 2 warmed serving plates, top with the cod.once the veg is done place in a serving dish and sprinkle with the shaved parmesan and enjoy.
