Baked Cod With A Creamy, Leek and Mushroom Orzo

Seasonal Baked Cod, paired with Creamy Leek and Mushroom Orzo beautifully captures the essence of the season. Fresh, flaky cod takes center stage, baked to perfection, and harmoniously married with a creamy orzo enriched with the earthy goodness of leeks and mushrooms. The result is a comforting, quality dish that celebrates the best of autumn's offerings, making it an ideal choice for a cozy evening meal.

Ingredients:

  • 1.5 tbsp plain flour
  • 2 cod fillets
  • 1 tbsp olive oil
  • 1/2 lemon, zested and sliced
  • A handful of thyme
  • 1 leek, sliced
  • 100g mushrooms, sliced
  • 150g orzo
  • 250ml low-salt stock
  • 1 tbsp crème fraîche

Method:

  1. Heat the oven to 220C/200C fan/gas 7.
  2. Tip the flour into a bowl and season. Dip each cod fillet into the flour until evenly coated. Heat 1 tbsp of the oil in a non-stick frying pan over a medium-high heat and fry the cod on each side for 2 mins, or until golden brown. Transfer to a roasting tin with the lemon slices on top and nestled in the thyme. Bake for 10 mins.
  3. Pan fry the leeks and mushrooms for 5 mins over a medium-high heat.
    Add the orzo and stock, and cook for 10 mins over a high heat, stirring continuously.
  4. Stir through the crème fraîche and lemon zest then season.
  5. Top the orzo with the cod and serve along with the roasted lemon slices.
