We have worked with Cumbrae Oystery for over 20 years which is a testament to the high quality & standard of their produce. Served in many of the finest restaurants througout Scotland.

Served with the following accompaniments:

Our very own Bunnahabhain Whisky spray. Which provides a  mix of spice, salinity, and smoke that  complements an oyster's brininess while also cutting right through its rich creaminess.

Mignonette; The French term for the classic oyster accompaniment . Finely diced banana shallots with good quality red wine vinegar and cracked black pepper. Simple and delicious.

Spiced fennel & lemon dressing. A more unusual accompaniment to fresh oysters. The aniseed notes from fresh fennel work very well with the saline oysters it can be gently heated before hand if desired.

Our Champagne Baron Albert hails from a small family run vineyard. This marque champagne was created in 1947 by Albert and Beatrice Baron, who passed the vineyards on to his three sons: Gilbert, Gervais and Claude. Now run by Claire, Lise and Aline: Claude’s daughters. From the first hectare to the current 55 hectares, the family has always followed this moral: to join our forces to grow stronger.
