WELSH RAREBIT
Welsh rarebit is an unctuous spiced cheese-based sauce traditionally spread on thick toast but pairs exceptionally well with smoked fish when grilled until bubbling & charred. Often made with milk but our version uses beer for a sharp tangy edge.
